James Martin calls turkey food of the devil in rant as he proposes alternative
ITV’s Saturday Morning star James Martin has revealed why he’s bucking the trend when it comes to cooking a Christmas turkey. Speaking from Birmingham’s Good Food Winter Show, the former Saturday Kitchen host urged fans to “just buy beef” instead.
“Turkey is the food of the devil. It’s ugly when it’s alive, tasteless when dead and no amount of stuffing up its a*** will make it taste better!” he cheekily exclaimed. “You can’t make a turkey more interesting, just buy beef!”
Not only does the 51-year-old chef have a distaste for turkey, but he also admitted to a hatred for air fryers, during his extremely frank discussion. Whipping up a JFC – a James version of Kentucky Fried Chicken – he insisted that his mouth-watering recipe couldn’t be perfected with an air fryer, as deep-frying guarantees a winning taste.
“I don’t even want to speak to anyone that has an air fryer!” he declared passionately. “I don’t use [them]. In my opinion they should be banned.”
James clarified: “You cant do this in a b****y air fryer. It’s got to be deep fried to get the colour, texture and flavour.” Besides avoiding the wrong frying techniques, he also believes the key to the perfect southern style chicken dish is in the BBQ sauce, with a little help from his secret ingredient, cherry Cola.

James also got inventive with his second dish of the day, a steak, after revealing that Wolfgang Puck had taught him an important signature move – sprinkling a beef stock cube over the top at the end.
Playing up to his well-documented obsession with butter, he also topped the steak with a generous helping of herb butter, before preparing his third dish – a toad in the hole, doused in a Madeira and onion gravy.
The Good Food Winter Show was a final chance for some fans to catch James in person, as he announced earlier that he’ll soon be taking a break from his TV career to receive treatment for facial cancer.
He was diagnosed back in 2018, but in the five years since, the cancer has returned several times – and he’s now just begun a three-month break to get things “sorted”.

In a heartfelt message to fans while on tour, he clarified: “I’ve been through a lot of s*** with cancer but I’m getting sorted at the end of next month… I will be back fighting at the end of February but I’m going on a little bit of a break [first].”
He also took the opportunity to thank fans for their support during a mammoth three decades in television.
Meanwhile, back in Birmingham, he was able to connect with fellow chefs including Hairy Bikers star Dave Myers, who has been through similar health struggles, including over 30 gruelling rounds of chemotherapy.
Michel Roux Jr also told Express.co.uk ahead of the event how much he was looking forward to catching up with James, with whom he gets on “very well”.
“He did Saturday Kitchen for over 10 years, and that’s an incredible feat because it’s not just getting up early on the Saturday morning,” he exclaimed admiringly.
“There’s also a rehearsal on the Friday and new recipes every weekend… it takes a lot of time [and] it’s something really quite intense.”
